Making Blackcurrant vodka liqueur

We have a bountiful crop of lovely blackcurrants this year, so apart from stewing them up and freezing them for pies and crumbles I decided this year to have a go at Blackcurrant vodka liqueur.  This is different from Cassis which we made last year with brandy as this uses vodka.

First pick your blackcurrants.  You need 750g prepared fruit for every bottle of 700ml vodka.

You then have to pick it over and remove all the leaves and stalks and then wash them.

Then gradually add these berries to a demi john.  You have to do this slowly and little by little or they go all over the place. Then add 750gm caster sugar.  I used  a funnel to tip mine in.

After you’ve added the sugar, you add the bottle of vodka.  We only bought the cheap stuff not the well known brand as that’s all it needs.

I actually made double the quantity so this is the 2nd bottle of vodka going into mine.

Then put a stopper in the top and give it all a vigorous shake.

Shake daily for a week, then weekly for a month, until all the sugar is dissolved.  Leave for at least 3 months to mature, longer is better.  Should definitely we ready for Christmas if we can wait that long.

This is very similar to the way I made strawberry vodka earlier on. So basically

750gm prepared blackcurrants

750gm caster sugar

700ml bottle of vodka

are all the ingredients you need.

After at least 3 months strain off the fruit and you are left with delicious liqueur to bottle up.

Making Strawberry Liqueur

Having an abundance of strawberries I started to research what else I could make from them and came up with Strawberry Liqueur.

The first thing we did was purchase a bottle of vodka.  Depending on the size of your bottle you can scale up or down the other ingredients.

Ingredients:

750g very ripe strawberries

750g caster sugar

270 ml water

700 ml vodka

Preparation method:

First hull and cut up the strawberries, then lightly rinse.

Next transfer to a large glass jar, I used a demi john.

Next add the vodka and the water:

Then shake it all up and seal the jar.

Store out of sunlight in the cool for 1 month, gently shaking the jar once or twice a day.

After one month strain the mixture through a fine sieve into a bowl.  Then strain again to rid the mixture of any remaining strawberry seeds, through a coffee filter.  Transfer the liquid to glass bottles.  Can be used immediately or improves over time.

So now I have a month to wait.  Until then I shall look up what else I can make………..

Making Sloe Gin in November

Our lovely B&B guests very kindly brought us a large bag full of Sloes that they had picked in the hedgerows in Herefordshire.  When they were here last time we were bemoaning that there were no sloes here in Buckland St Mary and they told us the sloes were plentiful near them, so they picked some, froze them and brought them on down to us.  That was so kind and thoughtful of them.

So we started off straight away making some sloe gin.  Firstly  you need the gin and we buy the cheapest we can find from Asda or Lidl.  For each litre of gin you need 250g of granulated sugar and a few drops of Vanilla essence.

These were the sloes just thawing out:

There were some really quite large ones amongst the haul, but they are smaller than damsons.  I used a funnel to add the sugar to the demi john.

And that’s all there is to it, just sloes, gin, sugar and vanilla. You give it a good shake every day for a week, every week for a month and every month for about 6 months.  We split the sloes into 2 demi johns as there were quite a lot of them, and in all used 2.5 litres of gin.  Goodness only knows what the recycling men thought of all the gin bottles in the recyling this week!!

To make sloe gin in November is somewhat later in the year than normal, but then we had different circumstances this year, so we are just glad to be making any at all.  It won’t be ready for Christmas this year though, so good job we have a little drop of sloe gin left from last year’s brew.

Blueberry Vodka

We’ve had a terrific number of blueberries on our 4 bushes this year, best ever.  So I have made blueberry muffins, and we’ve eaten them raw with raspberries and meringue and cream – yummy.  But then I started looking around for a blueberry liquer recipe and found one for Blueberry Vodka.

First you pick the blueberries and wash and dry them.  You need between 450 to 500g for this recipe.

Then you tip them into a demi john or large jar.

Next you add 210 grams of white sugar. I used granulated sugar.

Add the sugar

Then add 500ml of vodka. For a larger bottle of vodka, increase the quantities of sugar and blueberries in proportion.

Then give it a good shake and cover and keep in a cool place for at least 2 months, shaking daily.  After at least 2 months, strain off the berries and pour into a suitable bottle.  The blueberry vodka, or blueberry liquer should be ready for drinking.

Turning Blackcurrants into Cassis

This is the first year we have grown any blackcurrants. I don’t like the bother of topping and tailing them, but I do like Cassis. So I borrowed a book off a friend with the recipe for Cassis and set about picking all my blackcurrants. Unfortunately it wasn’t that many and some were past their best, but if they are only going to soak in brandy I don’t think it matters too much.

I then assembled all the ingredients and tipped them into a demi john.  To go with our very few blackcurrants we only had a 20cl bottle of brandy, so I had to scale down the recipe as we are not going to make much cassis.

Here is the recipe for Cassis.

Ingredients:

550g blackcurrants

1 x 3.5 cm pice of cinnamon stick

2 or 3 cloves

6 fresh blackcurrant leaves

600ml brandy

350g sugar

Method:

Put the blackcurrants in a basin and mash with a potato masher.  Put in a bottle with the spices and leaves.  Add the brandy and sugar.  cover tightly and leave in a warm place for 1 to 2 months.  Strain, squeezing out as much juice as possible, then pour into sterilized bottles and cork tightly.

So now we have to wait.  Still, with any luck we will have a glass each of Cassis for Christmas!
